So I saw someone mentioned Polysorbate up in here a while back. Thinking of snagging a little to play with. Maybe if it will make it easier to form a stable emulsion of my THC/MCT mix with it’s emulsifier properties. (I end up having to stir the bejezus out of it)

Ive been looking for a recipe to create a corn starch based candy like Sour Patch Kids and Sweedish Fish, that do not use gelatin’s or agars, only corn starch.

Do you recall if that PDF had anything like that, I think ive exhausted my google-fu

I think most starch-based gummies would use some kind of modified starch. The only one I can think of that I’ve seen using just cooked starch like that is Turkish Delight.

i think its some sorta modified starch and inverted sugar. Ive looked into this as well. I remember seeing the recipe somewhere…

Yeah I went down a rabbit hole once too, I didnt find any recipe’s but I think I came across some dupont modified starches that were geared toward candies, wither way a quick googling of modified starch gummies gives me a bunch of leads.

I haven’t seen a vegan free gluten free recipe on here so…

It is incredibly high in sugar but I will be posting everything minus the purees and concentrates used for flavoring as I formulate different flavors from the same manufacturer for a few rec companies in CA and 1 in WA.

150 grams water(to be mixed with tartaric)
90 grams tartaric acid
150 grams sugar(to be mixed with pectin)
90 grams pectin
1000 grams water
_____ puree
_______ concentrates flavoring
3,000 grams sugar

Step 1 - slowly mix in pectin sugar and water mixture. These clump like a mo Fucker!(reason we cut with sugar) homogenize extremely well AS pouring.

2 - pour into kettle, add concentrate cook to 200F

3 - once you hit 200f cook for 3 min than slowly stir in sugar(may need to have a wash bottle ready as the stir gets really squeaky)

4- set to 220 once sugars predominately mixed in and cook for 5 min at desired temp than add puree and distillate and set to 240F

5- once at 240 add tartaric acid/water mixture mix for a minute or 2 and pour into depositor/molds.

Oh and I HIGHLY recommend dehydrating gummies. The mouth feel is unmatched same with the gummy texture in general. And as crazy as it sounds i think a properly dehydrated gummy tastes much better too… FYI If you are using Purees and you don’t dehydrate your going to have a bad time.(your gummies will leak)

Honestly when it comes to corn starches i’m pretty clueless on that. It mightve been somewhere in their but I’m not sure, really having troubles finding the PDF. It was a free pdf as well

I’m also keen to try find out how to make starch gummies to make vegan gummies. Let me know if you get any further in your search.

This is an ingredients list for a good vegan (non infused) gummy you can buy in the UK: sugar, glucose syrup, modified starch, 6% strawberry juice from concentrate, dextrose, 4% coconut water from concentrate, acids (malic acid, citric acid, lactic acid), potato protein, acidity regulators: sodium malates and calcium carbonate, natural flavouring, fruit and plant concentrates (sweet potato, apple, black carrot), hydrolysed pea protein

I’ve noticed a mix of both starch and potato protein in a couple of other vegan gummy ingredient lists but don’t even know where to begin recipe/method-wise

Have you had any issues with shelf life after dropping the vegans from your recipe?

We were sourcing free range vegans on the streets in Eugene, but the supply has dried up since COVID. If we could get away without using vegans in our gummies, it would be much easier to meat our production goals.
