these look pretty dry, how long will they stay like that packaged? did you just make sure to dry them out prior to coating?
I’m not optimistic the monohydrous citric acid will react much different than anhydrous. Scroll up and see the same issue with tartaric acid melting @anon1342 … The problem is proper drying and formulation, I believe.
Depends how you package. We haven’t done extensive BUD testing but I am confident they will stay fresh up to a year with our packaging. They are heat sealed on top and bottom,
They are dried 24hr at least in cool circulating air prior to waxing then coat.

@raghanded your wax coating is doing its job, and an often overlooked piece of tech that can easily be added to a home cooks sop. What you’ve said about proper formula and processing being the fundamentals is very true. However, without that wax, the anhydrous will eventually do its thing. Sighting tartaric acid also melting them doesnt disprove my statement. The tartaric may also be anhydrous. Or reacting to enzymes within the formula if fresh ingredients are used for instance. Your gummies look great by the way. I would eat them also, your packaging will def make a huge difference in the fight against mold, but prevention of contaminants entering the bag before sealing is as important as keeping them out. I’m neurotic in the kitchen about sanitation and handling practices. Still get reports of occasional mold.

@Badcookieextracts the technique is called panning, and the easiest thing to do is find a panning attachment for a kitchenaid stand mixer. These things are one of the coolest pieces of equipment, allowing many cool new products like skittles for instance
Hmmmm I’m very interested, it looks like all those panning attachments are $500+ (not including cost of the mixer) but definitely keeping it on my radar and will likely be getting one

someone suggested a hardware store sprayer. which won’t work for chocolate, but might work for gummies…
