Deposit closer to molds and with less pressure = no bubbles unless you’re really whipping them up that much mixing ingredients together (which you shouldn’t need to)
That’s straight up gummy abuse… but it made me laugh…
A better idea would be to have a special lid, that you could put vacuum to… right on your cook pot.
But that’s not how we achieved this outcome…
Throw the “batter” in a planetary centrifuge / centrifugal fluid deaerator
Or you could just use a syringe, like I mentioned above…
All jokes aside…
Lots of vacuum batch cookers on the market from companies like chocotech
If you have the money… why not
It’s really very easy to achieve without all that expensive equipment…
I’m not joking about the syringes!
That’s not the only thing involved, but the syringes make a huge difference…
Product without syringes being used.
With syringes being used…
Same SOP for both pics…
Looking jello clear.
Lol… we keep getting that feedback… from the free CBD samples in a few stores
Funny, we don’t get the same feedback when they are not clear… same recipe for bothe.
One is clear, and the other is not… different responses, same density.
I have always used syringes to fill molds and yea its the superior way
That’s why your a GummyChad… keep up kid that’s way to freaking slow
Didn’t you give out samples of rock hard gummies
What’s your finished aw content in this SOP?
Actually no! We dont need to give out samples!
Its actually the same as the 1st post… suprisingly!
I don’t remember seeing a final water activity # in the original post but it’s been a long time lol
If it’s been this stable for us… for all these years… why mess with it.
A piece I was not willing to change… sugar and water % same for the gelatin… only changed ingredient types and added a few ingredients to make up the missing gelatin… boy what a difference
I have a spiral binder full of recipes, combined with texture analysis…
I didn’t say you should mess with or change anything, I’m asking if you have a final landing point for active water content prior to packaging
And I answered you… we are doing exactly what has worked for us in the past… over three years shelf life, and counting.
