So I have a customer that has a recipe they wont me to follow fairly close. When I first made the recipe it was very chewy, like too chewing on ballistic gel chewy. I tried adding more lemonade that is calls for and it worked great but now right when I add sugar they start sweating bad. Do you have any idea on how I could fix this issue? they donāt want me using corn syrup

You added more water which made it less chewy but creates other issues.
Hard to recommend a fix without seeing the recipe.

Do you just have to ride a perfect 3.6 pH, or use extra buffer to prevent syneresis or something?

Iām from Minnesota and recently went home for my sisters graduation. While I was there I spoke with my Aunt. She has been working for Cargill for about 20 years. Cargill is a huge producer of pectin. She said she gets alot of calls from the CBD industry in regards to pectin but no single company can meet Cargills MOQ. If there is demand I was thinking about organizing a group purchase or setting up a distribution company. Not sure if this interests anyone if it does I can dig a little deeper and get more details. Iām pretty sure we can get a little more flexibility on terms than the average person off the street just calling in.

So a friend of mine is thinking about teaching me how to make his gummies, so I can make them for him.
He told me it takes 10 hrs to complete start to finish this canāt be right can it.
Iāve read thru most of this thread and a large part of another thread totaling 2000 or so posts, and no one ever mentions how long it takes to make gummies.
How long does it take to So a friend of mine is thinking about teaching me how to make his gummies, so I can make them for him.
He told me it takes 10 hrs to complete start to finish this canāt be right can it.
Iāve read thru most of this thread and a large part of another thread totaling 2000 or so posts, and no one ever mentions how long it takes to make gummies.
It takes me about an hour of actual work to make a batch of ~100 pectin gummies with zero optimization/scaling, plus a couple hours to gel, and the dry time
(An hour includes demolding/sugaring)
Our new SOP allows us to package within 24 hoursā¦
