Gummy recipe and SOP inside

Do you use the jolly rancher jello? I can’t find any around here.

Could probably degas pretty easily. We degassed vats of gelatin when we were making softgels to get the air bubbles out - pull vac until the gel mass would rise, release until it went back down, repeat until the gel was translucent and free of air bubbles. We would do it after mixing and then transfer the degassed gelatin into a holding tank. I think this would apply for gummies too if you wanted them free of bubbles.

I just whisk the gelatin. Im considering making an emulsion with my homogenizer using the bho, lecithin, water and mct. I dont think it needs to me mechanically mixed into the gelatin? Mine are consistent even without the homogenizer but I may as well use it. But when I bloom the gelatin and then heat it there is a foam. Just some bubbles, i skim them off. My gummy recipe is different but they are clear and not opaque

Wanna hear my prices/calculations?

I make 300 gummies every 45 minutes, then transfer to molds, takes 10-15 minutes. So 45x4.

25mg per gummy, 8.5g for every 300 gummies

I don’t include labor costs as I work by myself mostly and anyone who helps just asks for pay in gummies. Only packaging, distillate and I think thats it.

I’ve pretty much got my gummies figured out for transparency. The more whipping = less cook time imo, letting it sit cooks it better and faster whipping/stirring every 5 minutes.

They always come out transparent/opaque, more transparent than anything and the more they sit in the fridge/sit in general they get more clear

your terms are weird. Using a recipe I could easily 10x the recipe with a larger double boiler/s and more molds. So its not multiplying gummy x time. f you need more make a bigger batch and have more molds. I should see how a slow cooker works on a variac and that would be a beast.

Always trying to improve. The new molds volume, really makes the recipe POP. The sanding, makes you want to eat a few (scary).

if you use a mag stir plate theres no whipping action other than your initial infusion. it keeps it moving while you work too

Yea, our bottle neck is now drying and sanding. But we are building a large room for that. :kissing_heart:

Never have sanded but drying is taking me roughly 24 hrs.

The molds are so quick now it’s almost unfair. Wink :wink:

I need to buy one

So I can have the mix sitting stirring the whole time while filling molds, keeping it at a stable temp so it doesn’t harden up in the dish.

I put quality > quantity so I’m fine with taking time.

@MillerliteRN is using our cube molds, not vector molds :blush:
