Ever figure out the stickiness issue??
Mine have been not getting sticky at all. I coat them right when I take them out of the molds, then let them air dry for a couple days.
I’ve been using Malic acid in my coating since I read that it’s less hygroscopic than citric. Also has a bit less of a citrus-y taste which is better for some flavors.
And they’re gelatin? What bloom?
I’ve been getting it from the bulk-barn so I have no idea. It seems similar to Knox I used so I’m guessing about 230 bloom.

Awesome work man! Do you coat yours with any caranuba or beeswax? Maybe something to aid in drying? Also, do you know your cooling room’s humidity?
I’ve just been using the sour sugar-coating since they’re just for my home-use and wax-coatings seem a little out of my league in my kitchen. Humidity has been around 50-55% when they’re sitting out.
I do notice that they’ll “sweat” a tiny bit when I first coat them sometimes, so a couple times I’ve had to re-dunk them in the sugar after one day out and then continue the drying as normal.

You bet i do, that is the key to success with gummies. Its a pretty tough task in the summer, we have had to pull the drying fans out this last month or so. Summer sucks here in Texas, its 110 F outside right now. We try to keep the humidity in the mid 40’s.
How do you pan by hand my man?
He doesn’t wax his gummies, he coats them in one of the powders (i forget the one he uses)
Maybe theres a way to incorporate a magnetic stirrer? How do you hamaginize yours?

Damn! 110F Time to get the F outta Dodge! Are you guys using any wax or Certicoat like finishing? Or just drying all-natural?
