Depends on who we are making gummies for. Some gummies are packaged in 40 count bags and some are placed in 5 gallon buckets.
We have 3 folks in the kitchen cooking and demolding. Sometimes we bring in another warm body to help package.

This recipe is good but it can be alot better. Jello packets are not a viable option when trying to scale. I have a simple recipe containing 250 bloom gelatin, glucose syrup, sugar, water, citric, and sorbitol. Flavoring possibilities are much greater with my recipe since you can add concentrated flavoring. Simple SOP. Mold inhibitor is a good addition to any recipe but not necessary with my recipe. I did a 3 month test with and without mold inhibitor and i saw no changes in texture color taste or smell. I have sized the batch to 2000ml per batch (this fits my molds perfect) but can easily be scaled up or down. Much cheaper route and much easier. Texture is amazing, typically with the recipe that use jello packets the gummies come out sort of jelloy instead of gummy. This jello recipe is good for small scale and people who want to make at home but large scale operations thrive off of a professional style recipe. Reach out if anybody needs help with a shelf stable and professional recipe. I have vegan recipes as well.

We are happy to help if we can. If you are looking for a gelatine SOP, unfortunately, we are unable to help. Our gelatine recipe ( and all versions) have been spoken for. Iv recently gotten permission to say so. Our Pectin SOP knocks it out of the park. We are happy to help if we can!
