Got my eye on the “hi-temp scraper” by R.S. Quality. More for the second pass detail work, but thermally resistant and has a nice handle on it + a crisp edge. Waiting on some feedback from clients putting it through its paces.

I had a recent order… to Bring Back the Bears…
I was not looking forward to the squeeze bottles, but reluctantly agreed…
I was able to use this funnel… that I bought for R&D a year ago…
I bought a few funnels… in the Hope’s of finding this…
For all the ketchup bottle operators… this turns the transfer to the bottles… a one man job…
The OD of the funnel is compatible to my ketchup bottles…
PERFECT , VERY TIGHT FIT…

And for shits and grins… I timed my ketchup dispensary skills… my accuracy was hindered frome the lack of current practice… but @ZizzleB it WAS WAY BETTER THAN 1000/ hr
Actually it was 2.5 min per bottle X 5 bottles = 12.5 min for 1200 gummies…

You still getting nice texture out of bigger squares with gelatin? Anything bigger than my bears ends up being more jello like than not maybe it’s just me
The deeper molds make that more challenging, for sure.
Definitely takes longer to get them out as compared to getting them in…
I took note today and it took me 5.5 minutes to de-mond 400 cubes.
The texture is the same as the bears, IMO.
Here I am making 2500 bears a month taking them out one by one. For sure need to revisit it.
Would anyone recommend spray or starch or something along the lines? Using gelatin.
Not big time by any means but de molding 2500 by hand gets annoying (using amazon molds)
Right now it’s 24hrs in mold, sugar when firm but still kinda tacky and then let them air dry another 12-24 and they’re usually really nice. My cubes came out more like jello same method
We dont use gelatin so I may be way off but (with pectic) non-stick cooking spray works wonders if you spray your cavities lightly before depositing.
Pectin seems really daunting to me. Especially at my scale… although I really want a nice pectin gummy to enjoy.
I make them for ~11c and they go for 28c since they’re for they fam to get them cheaper meds.
Personally I have this weird thing about I actually enjoy the process so I end up with more than I bargained for. If I could make gummies as my job I totally would.
Sorry long winded… how is it working with pectin and do you find it to be roughly the same cost as using gelatin? I know it’s a lot more finicky
To be honest, I have only ever worked with pectin, so I can’t really attest to how the compare to gelatin. everyone always says pectin is finicky, but it’s always been pretty simple in my experience. idk if it’s just because I have never worked with gelatin so I have no frame of reference, but I have never really had a lot of the issues I see other people run into with pectin.
The only time we ran into problems is when we received a shipment of pectin mix that wasn’t mixed homogeneously (there’s pectin, sucrose, citric acid, and sodium citrate in the mix). One of the ingredients had settled tp the bottom of the pails in shipment so when we scooped off the top of the pail, our gummies weren’t coming out right. But once we figured it out and mixed it thoroughly, it worked like fine.

You definitely want to coat your molds, my gummies fall out when I pop them because the molds are coated in a release

Really? Interesting. If you remember why, let me know. The only difference we noticed was that the gummies slide right out when we spray the molds. we spray em really lightly but it makes a world of difference.
I just did a quick google search and didn’t find much as to why you shouldn’t use it, but I think I may look into an MCT or olive oil spray
Sunflower seed oil is what I use
I’ll try and find who told me that, it was someone I trusted or I wouldn’t have remembered it lol
