I am doing pectin gummy on a large scale with a full production line right now. Current production rate is 50kg of gummy per hr (about 14000 units of gummies per hr).
I know the reason why Kingofkush420 think it is impossible to use depositor for pectin gummy. The last step in making pectin gummy is adding acid into gummy solution. Once acid is added, gummy will become hard to move in less than 5 minutes. Mixing gummy solution with acid before dumping them into the hopper is not possible, because the depositor cannot finish all of the solution within 5 mins. You will end up with a giant solid gummy hopper.
The solution is: we add a precise liquid pump and a small mixer (screw press style) in the production line, right before the gummy solution falls into the hopper. The function of the liquid pump is to inject a precise amount of acid into the mixer and mix well with gummy solution. We adjust the amount of injection based on production speed. With this setup, we ensure there is a minimum amount of gummy solution in the hopper, and the depositor can handle them in time.

I’m guessing it’s going to be something like a dosing pump with solution to adjust ph and a little mixing vessel to make sure it’s being dispersed evenly before hitting buckets. Working off the depositing speed you can figure out how much solution you’d need at any given time in the bucket and you can even trigger it mechanically on each up or down stroke.

Dark city molds explained to me how to modify the recipe to set slower which is why I said it wasn’t impossible after
My gummys set in 3 minutes, you’re not going to use an depositor for something that kicks this quick
