I would buy this brand off of amazon in small quantities for home use. Im a fan of the taste but double check before buying since some of their syrup does contain vanilla. The packaging is similar to the non vanilla. We found a deal off ebay but they tried a bait and switch and gave us a cheaper syrup. Ended up being a free 5 gallon, since we were refunded, so all our r&d was practically free.
I can’t vouch for any of the other sizes they offer, but I know that that specific syrup doesn’t have any added flavor (doesn’t even smell like vanilla and not listed in the ingredients.)
Would strongly recommend a bucket heater/Powerblanket to keep it at a workable temp
im not doing home use, im scaling this recipe atm to do 1000 gummies per batch that will eventually go to 5k a day lol so i either need a lot of glucose or to start working with corn syrup
pdxcanna i will send you a gift when these hit our stores
Question for anyone doing these on a larger scale, does anyone start their pectin mix in a separate pot before adding it to the main pot? We got a fancy induction burner but it gets wayyy to hot way to quick and so far my only solution has been running an older style regular electric burner first until I add the corn syrup then I move onto the big burner.
Also, if anyone has experience with a Savage Bros Firemixer or something similar, do you start the pectin mix in the mixer or do you do it in a pot first and then add it?
I’m thinking start in a small pan to make sure its all mixed and dissolved and then move it into a main pan?
I use an 1800 watt induction pot and only have problems with the pectin burning when i dont mix it.
Savage bros are a waste of money IMO i did a consult recently and they ended up replacing there savage bros with induction pots and stir devices since its easier to manage and scale. The savage bros didnt mix the pectin well enough in the pot to remove the clumps so theyd mix it on heat outside the savage bros then dump it in
yeah its probably because im working on a lot smaller batches but even when i had my burner set to 300w and 140f it still cranked. Also my first time ever using a piece of kitchen equipment like that so probably user error on some level.
But yeah we arent buying a Savage Bros, funny enough we actually have our engineer from China here visiting us this week whos going to build me everything I want, just wanted to know if you start the pectin directly in those mixers but i also didnt consider that the batch size would be 20x-50x what im doing now so it wont burn nearly as quick.
I know this is an old post but would these gummies be ok without coating them in sugar or do you have to?
You need some kinda coating, sugar coating is all I’m really familiar with. Caranuba might be an option
Most pectin gummies I’ve seen can be dried out and they won’t stick afterwards
In theory it should work with this sop but no guarantees
Do you just let them get a good dry skin on the outside edge while they’re in the mold then flip over and dry the rest, or something like that?
Yes, or you can pop them and let them sit and dry for a while and any that stick together will be able to be pulled apart after a day or so
Anytime i get some that stick to the top that isnt sprayed i let them sit over night and they pull apart no problem and will still sugar
Non-sugared gummies look really good if you get the ‘shiny’ silicone molds without the matte finish.
i know its a little bit of a late reply but ive left the gummies from this recipe with no sugar coating. it does form a little bit of a skin and gives it a little more chew IMO but its not bad.
i did not try to package them or mix multiples together to see if they would stick though, but im sure as long as they dont get warm it would be relatively easy to peel them apart if they do stick.
