Ok, next dispensary you work for or can do a site survey, bring a stop watch… it sounds like cash is managed all day. So, to get a true number… anytime cash is touched in anyway outside of transaction handling between the customer and cashier, clock-it. Even bill breaks, the moment you recognize as the cashier, you need cash.
Also, if you count drawers after shifts, make sure you catch that time… sometimes the cashier counts, then the manager counts or they count together… regardless, dual hourly pay to do the same task.
All day, open to close and I recommend three days, one slow day, one mid busy, and one busy day. This would give you a good average. (You probably already know this data to pick)
Respectful… its harder to scale the time this way. But again, its just one piece of the puzzle.

A lot of times, reporting the cash vs not, you will make out better with the reduction in labor costs, shortage elimination, audit time, breaking bills, etc. all this goes away.
Like an ATM for cashiers, money in, money out! All tracked to the user. user gets a receipt and hands it in with their other EOD close out.
No they are multi state dispensary operators. I would start with MSO’s in the cannabis industry.
