Oh yeah, and sugar production increases with ripeness. That’s why a red bell pepper tastes mostly sweet, while a green bell pepper tastes much more bitter and, well, green.
If the pepper begins to lose firmness, it is too ripe. Squishy peppers can still be used, providing there isn’t any mold/rot present. It should be used immediately. Sometimes if the bad part isn’t too bad, I’ll just cut the bad part off and use the rest. Waste not, want not!

No its like acidic bile its honestly foul, I love durian though.
Every durian ive ever had tastes a bit different, some nice and carmel-like, some pungent and onion-like.

I would say, durian goes from more of a caramelized version of discarded toe nail fungus, to 3 week old tweaker (begins with T, and ends with Wat).

Worse than puke… You smell it in the forest 10 minutes before you ever see it. Literally the worst smell I’ve smelled from a tree.
