Citric acid in gelatin gummies?

Hello all, Ive got a gelatin recipe that works amazing. I have read in that people suggest adding citric acid because it will increase flavors. So my base recipie is 1000 grams. If your not trying to make them sour, what percent of citric acid would you add for a flavor boost? For sour Ive been using a sugar mix with encapsulated citric acid. I’m just trying to see if you guys recommend it, and if you do what’s a good percentage?

How about taste the dry mix and see if it’s sour obviously divided it to 10 percent to save money

Iv been doing hot cinnamin these days,i believe when i made sour, usi g 2 6oz box of jello for a batch i would use a teaspoon, lorann oils has some sour mix too, if u use too much the acid will keep the gummie from setti g correctlu

I typically make a batch of a similar size and use 15g of citric acid in my batch. Added near the end of the process to your gelatin mixture. If you make your batch of gummies all in one pot and you don’t split your gelatin and sugar fractions for boiling, you can combat potential sugar inversion (where citric acid causes sucrose to split into glucose and fructose, making your gummies sticky and unable to maintain shape) by adding around 3-5g of Sodium Citrate to your recipe. I usually add the sodium citrate anyway. If you don’t have sodium citrate on hand, you can cook up a batch pretty easily using bicarb and citric acid, the ratios are easy to find on Google.

Citric acid is a great addition to gelatin gummies! It adds that perfect tartness and also helps preserve them longer. Just be careful with the amount—too much can make the gummies overly sour or affect the texture
