A local supermarket chain has a gummy candy line that has almost EXACTLY the bite of a gelatine-based gummy. I’m not vegan myself but many of the people I know are. Neither pectin nor Agar-Agar ever hit the spot for me.

Ingredion is one company I know of that produces those modified starches. If you order some samples they should also be able to provide a sample SOP to work from.
The handbook of hydrocolloids has some stuff about it, it requires pretty specialized equipment from what I can remember
Should have mentioned this is my last post as well but if you haven’t checked out carrageenan that might be anoption. Its made from seaweed so it’s still vegan but it produces a more gelatin like texture. If you google Gino biotech they have a recipe that could be scaled down.
