Thermometer/temp sensor display for 3-pin thermoprobe

Hey all, I could use some advice.
I have a thermoprobe here from Across International with a GX16 3-pin aviation connection, female (at least that’s what I’ve been able to look up, correct me if i’m wrong). I’m looking for an independant temp sensor/display that’s compatible with these connections.

I have this piece, which looks like it would allow me to solder to a sensor, which I have the ability to do. To be clear i simply need a dependable temp display, no need for it to interface with any heating units or anything.
Any and all advice is appreciated, thanks <3

thermocouple reader - Google Search

those will get you numbers from a thermocouple, but you may be looking at an RTD thermoprobe…so your query may vary

yep. those should work with pretty much any probe. love auber instruments.
