Question regarding enzyme degumming.

So I just got some degumming enzyme and am trying it out on a small scale, 20g of 1st pass distillate. I heated my distillate to get it to stir with a mag stir bar and hotplate/stirrer, added a little more than 20% by weight of hot water and stirred for a bit. The SOP says to let mixture cool to 45C which cooled the mixture down too much to allow for the stir bar to spin. I’m getting ready to add the hydrated enzyme, but am confused as to how I’m supposed to stir it in. The SOP says to maintain a tempt of 40C for 30 minutes, but how does one stir the mixture if it can’t go above 40C? I figure I’ll just have to stir by hand since I don’t have a homogenizer or overhead stirrer, but that seems like it would not be enough. Am I missing something?
