After rinsing, all surfaces and equipment must be air-dried or dried using a clean, lint-free cloth.

Recordkeeping:
The designated supervisor must maintain records of the chemical sanitizing process, including the date, time, type of chemical sanitizer used, and contact time.

These records must be kept for a minimum of one year.

Training:
