Is there a rule of thumb for how many g of shatter fit on a given size tray? The trays I have are ~11x11" and am wondering if there is a general rule for how many grams of shatter I can expect to fit on a tray with a proper thickness.
Define proper thickness. You can pile as much as you want.

The thinner it is the more likely to sugar or do I have that opposite. I do that sometimes

A little bird told me 30g fits in the bottom of a 10” vac chamber without muffing it’s way up the side.

Once upon a time when I was making slabs, I was able to fit between 80 and 110 grams to a single slab in my .9 oven.

I’ve found a qp on a 1.9 to be a perfect size that’s not to thick and not to thin.
