I keep seeing all of these labs in the news that blow up presumably because of the natural gas water heaters that are common in most garages which just made me curious- couldn’t this simply all be avoided by turning the water heater off? Or does the water heater still combust and draw in air while off?

disconnecting power to the unit would be the best choice.
You’d have to cut the gas to it, and unplug it both.

Pro-Tip: Don’t use hydrocarbons near electricity. Go outside or in a C1D1 rated environment, preferably the latter.
Hey do whatever you want though, maybe make sure the rest of the house is unoccupied.
