Does sugar preferentially extract different cannabinoids than oil? Do different oils also vary in this regard?

I’ve gotten into a lot of different extraction methods for edibles and can’t seem to find any data regarding how different oils might extract THC, CBD, CBN, and other cannabinoids in the flower

For instance, I’m using the same herb to make extractions in MCT oil, beef tallow, and maple syrup. They all feel distinct.

I did look up the logP of CBD, THC and CBN and CBD is substantially less lipophilic than CBN, which is less than THC (but not by a ton). They’re all still super lipophilic though.

I’m particularly interested in the utility of sucrose for solvating different cannabinoids. All of my searches regarding sucrose keep bringing back “sugar” which is just extract lol
