Did you ever find the cause of the “champagne”, I’m going through the same thing now…

The color of the final product is probably due to old bud/trim. Fire in Fire out. Oxidized terps or cannabinoids change colors.

I went for that off white crumble with moderate remediation and white crumble with heavy remediation.

Didn’t want to deal with it as shatter, couldn’t get the color totally right.
