I was going to say this! Been growing mushrooms for some time. Not commercially but I have considered it. They are pretty easy to grow and have good margins for farming. Micro greens would use a similar setup and your market would be almost identical. I think micro greens would be easier to sell to people already buying mushrooms. Mushrooms can be sold as a dish and drive revenue for a restaurant so it’s a easier sell, while micro greens are getting added to existing dishes.
For the most part you have 3 options for selling micro greens. To restaurants, to grocers, and at farmers market. Farmers markets are a grind and inconsistent, best to focus on production and distribution IMO. If you can get in with a produce distributor you will have consistent sales at the cost of your margins.
My ex was a farmer and she tried doing micro greens at one point- they had a hard time selling them and making it profitable through farmers market and on farm sales. But with the right set up and sales network it could definitely be done.
it seems like it will be the classic model- farmer does all the investing and work and barely gets paid unless you can market it yourself. they say dumb shit about people such as illegal aliens taken advantage of. Most farmers are still in indentured servitude even though they have a nice house and truck.
If I sell just half my produce at the farmers market and donate the rest to the food bank or homeless shelter on the way home, I do better financially and spiritually than I do selling to the produce broker. I also sell more weed as a result of people smelling me at the farmers market😉
I was looking at cannabis jobs and the chicago botanical society popped up as a growing job, its not cannabis but it did pop up on the listings under cannabis.

In canada they dont get daily murders so busting fakes at the farmers market is a thing. It almost sounds like they mark the food UP based on the farmed by me thing. People who buy weed know i grow it, but thats not a reason to charge more. I am 1/3 the dispensary and better. in that same vid is a chad growing mids hydro peppers that are ok but I know the tomatoes stink.

i have regular metro rack style storage racks and that could hold levels of racks of 24 x 8 flats. its not a big investment but you need product before you market it. I think microgreens are simple but you should at least know youre good at growing it too.
I have two cannabis harvest under my belt. Due to time and space i had to stop and find another crop to grow for side income.
The hard thing is to sell it. You need to at least show them the greens to sell them.
as with selling pot, for me the hard part isnt having a good system in place to attract new customers

Rabbit is more popular than you might think. The place I buy my Buffalo from also raises rabbits for meat.
