250 g all-purpose flour
1 teaspoon cornstarch
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
145g brown sugar
65g white sugar
5 tablespoons unsalted butter, softened
80g ripe banana, cut into slices
1 teaspoon vanilla extract
1 large egg, room temperature
-Preheat oven to 375ºF. Line two baking sheets with parchment paper.
-Combine the flour, cornstarch, baking powder, baking soda, and salt in a small bowl and set aside.
-Cook banana slices in butter at medium-low to medium heat until soft/mostly dissolved, allow to cool 20-30 minutes. Add sugar, beat together until mixed well. Add vanilla extract and room temp egg, blend well
-Using a wood spoon or silicone spatula, stir the flour mixture into the banana mixture until well combined.
-Using a 1.5-tablespoon cookie scoop, drop cookies onto the prepared baking sheet about 2 inches apart.
-Bake for 9-11 minutes or until cookies are lightly browned on edges and tops are beginning to color. Cool the cookies on the pan for 5 minutes before transferring them to a wire rack to cool completely.
I’m gonna try this again later with the caramelized sugar, maybe some peanut butter. These are really chewy and have a great banana flavor
They all varied of having kewpie, avacado, cucumber, teriyaki fried & glazed spam, rice seasoned with rice vineager, and spicy kimchi.
Made around 8 variations and each one was just as good as the last. I will eat the shit out of a tray of musubi and making them at home is so much better when you hear your daughter “ dad this is so yummy oh my gosh I want more!” Cherish little moments they pass to fast.

I am actually surprised at how light these are compared to the Dacor (brand) set that I have. The frying pans, especially, feel about half the weight. Either way, they are all definitely lighter than the carbon steel I have from Smithy, and I couldn’t be more stoked.
Chicken thigh with skin, breaded with corn starch and pan fried in duck fat. It tastes like a Mcdonalds chicken sandwich but its not trashy. Tried a blue cheese sauce of just blue cheese and sour cream, didn’t really like it; too sour, I added a bit of salt to make it better, but I think some mayo and buttermilk would have been better.
