HACCP and targeted microbial testing

I’m revising our HACCP and I’m wondering if anyone can tell me about the requirements for targeted microbial testing. Do I need to test for E. coli specifically? Salmonella? We currently test for total aerobic plate counts but I want to make sure we are compliant with regulations that might be coming in the future. I can’t find any info in the CFR and our state guidelines reference the CFR. Any help is appreciated!

In my experience, you need 0 CFU of salmonella and E. coli.

You need validated methods to demonstrate your capacity to test for these.

We are doing 3rd party testing, accredited lab. I am sending some out for E. coli and Salmonella but I haven’t been able to find a requirement or standard. This is super helpful, thanks!
